Vegan Kiwi Lime Chia Pudding

This tart and tangy Chia Pudding is loaded with nutrients, immensely satisfying and can be enjoyed for breakfast as well as dessert!

Prep Time: 15 minutes: serves 2

INGREDIENTS

  • ⅛ cup chia seeds

  • ⅓  cup greek yogurt (or any Vegan substitute such as almond milk plain unsweetened yogurt) 

  • ½ cup + 1 tbsp  unsweetened Almond Milk

  • 1 tsp vanilla extract

  • 2 tbsp cup honey or maple syrup if making vegan version

  • squeeze (~¼ tsp) of lemon juice

  • 1 kiwi peeled and sliced

  • ½ lime sliced

INSTRUCTIONS

  1. Add all the rest of the ingredients except Kiwi and lime and mix until combined.

  2. Place in a bowl and cover (or use a big quart mason jar) in the refrigerator for at least 6 hours. Stir every few hours.

  3. Serve with sliced kiwi and limes.
