Oven Roasted Chicken with Vegetables
Total Time: 1 hour 15 min
Serves 2 (plus leftovers)
INGREDIENTS
Chicken Breast and Thigh- about 4 breast and 6-7 thighs depending on the ratio of white meat to dark that is preferred.
2 Red bell peppers
2 Yellow bell peppers
2 Yellow or Purple onions
1 bunch of asparagus- sliced in two inch pieces
5 tbsp olive oil
4 Garlic cloves, minced
Salt and Pepper to taste
Any other veggies you want to add- just cut up into small pieces
INSTRUCTIONS
Preheat oven to 380°. Line a baking sheet with parchment paper.
Clean the chicken and season with salt and pepper
Bake chicken for 15-20 min then remove
Cut all veggies and potatoes into small pieces – about ½” square in size (except asparagus)
Put all veggies in bowl and mix in olive oil and season with salt and pepper
Place veggies on cooking tray with chicken and finish baking
Bake until veggies are well done and the edges are brown- about 30-35 min. Longer if you like them more crispy. Chicken should be cooked till internal temperature is 180° about 1 hour 15 min total cook time
