Bite-Sized {DF, GF, V} Chocolate Candies

These candies are AMAZING! The perfect bite-sized pieces and with all the different topping options available, you can create whatever magic you want in the kitchen! Our favorite toppings are dried cranberries and pepitas (we have a very strong pink theme going on this month, but it is the month of love, so we're embracing it!). The best part?? These candies are gluten-free, dairy-free and fully vegan. Score!!! (PS: We know candy isn't technically "healthy", but this is one recipe we stand behind in the health factor.) 

Candy Heart & Lip Molds

 

Serves: 24 (1-tablespoon) candies

INGREDIENTS

Chocolate*

  • 6 tablespoons cocoa powder
  • 7 tablespoons coconut oil
  • 4 tablespoons unsweetened oganic almond butter or peanut butter
  • 6 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract or almond extract (we recommend pairing the almond with the almond and the vanilla with the peanut)
  • ⅛ teaspoon sea salt 

Toppings (optional)

  • Toasted, unsweetened coconut
  • Chopped, toasted almonds
  • Crusted, roasted, unsalted peanuts
  • Dried cranberries & Pepitas
  • Cacao nibs 
  • Crushed raw cashews
  • Crushed raw walnut pieces
  • Pecan pieces 
Bite-Sized Candy Bites

INSTRUCTIONS

  1. Add all the ingredients (cocoa powder through salt) to a small saucepan. Heat over low heat, stirring frequently, until all the ingredients are just melted and combined. Remove from heat.
  2. Carefully spoon 1 tablespoon of the melted chocolate mixture into a silicone candy mold(we used hearts & lips for our Valentine's Day theme! too cute!!)
  3. If you are going to top the candies, go ahead and put the toppings on now before you freeze or refrigerate. 
  4. Refrigerate for 2-3 hours or freeze for 15 to 20 minutes until set. Store refrigerated or frozen.
