Rose Gold Champagne Glitter Donuts {Gluten-Free , Dairy-Free}

Alright, let's be real here. These donuts aren't exactly healthy, with the sugary icing and the champagne, but they sure taste freaking delicious. And they're up in time to make for New Years Eve, which is National Champagne Day. Yay! 

Rose Gold Champagne Donuts

These donuts are so good! They're fluffy and light and you can definitely taste a bit of the champagne in the glaze. We added the rose gold edible dust to the glaze to give them a pink-iridescent look.

INSTRUCTIONS

Make the doughnuts:

  1. Preheat the oven to 350°F
  2. Heat the champagne in a small saucepan or in the microwave until warm, about 110°F.
  3. In the bowl of an electric mixer fitted with the dough hook, combine the flour, sugar, and yeast. Add the champagne, vanilla extract, and egg yolks and stir until combined. Add the butter and cream and knead for 6 to 8 minutes, or until a smooth sticky dough forms and pulls away from the sides of the bowl. 
  4. Grease 1-2 donut pans with an oil cooking spray (try avocado-coconut oil spray).
  5. Roll the dough out on a floured surface until it’s just over a 1/4-inch thick. Cut into 2"-strips, and roll into ropes. 
  6. Lay ropes around donut molds. 
  7. Bake the doughnuts for about 12 to 14 minutes, or until lightly golden and puffed.

Make the glaze:

  1. In a medium deep bowl combine the sugar, salt, milk, and vanilla. Add the champagne until a thick glaze forms. Add the rose gold dust slowly until you have reached your desired state of iridescence and pink. 
  2. Dip the doughnuts in the glaze completely. Repeat 2-3 times for each donut until all of the glaze has been used. 
  3. Sprinkle with the edible glitter, sugared crystal glitter, or the baking dust. 
  4. Let sit for about 10 mins. 
  5. Enjoy with some coffee or the rest of your champagne for an extra special treat :)
